Ingredients (3 servings)

Preparation

  1. Rinse the millet until the water runs clear.
  2. Simmer millet, pumpkin, and jujubes in the water; bring to a boil, then lower the heat.
  3. Cook 35–45 minutes, stirring occasionally, until the pumpkin breaks down and thickens the porridge.
  4. Serve hot; it rarely needs added sugar.

Traditional reading

Millet and pumpkin are associated with the center and late summer; tradition studies this pairing as an example of simple, mildly sweet, easy-to-digest food.

Variations

  • Finish with a few drops of toasted sesame oil or toasted seeds.
  • Half millet and half rice gives a silkier texture.

Precautions

Dried jujube concentrates sugar; omit or reduce it with diabetes. Refrigerate leftovers promptly.
