Ingredients (4 servings)
- 1 cup white or brown rice Rice
- 8–10 cups water or light stock
- 2 slices fresh ginger (optional) Fresh ginger
- 1 scallion, thinly sliced, to serve Scallion
- A small pinch of salt
Preparation
- Rinse the rice and add it to a large pot with the cold water.
- Bring to a boil, reduce the heat, and simmer 60–90 minutes, stirring occasionally so it does not stick.
- Add water if it thickens too much; the final texture should be loose and silky.
- Season lightly and serve hot with scallion, ginger, or other toppings.
Traditional reading
Tradition describes it as a center-supporting, easy-to-digest, adaptable dish: the neutral base accepts warming or cooling additions depending on person and season.
Variations
- In winter it is studied with ginger and shredded chicken; in summer, with mung beans.
- Swap part of the rice for millet or diced sweet potato to vary the grain and sweetness.
Precautions
Refrigerate leftovers promptly and reheat to boiling: lukewarm congee is an easy medium for bacteria. Adjust grain portions with diabetes.
