Ingredients (4 servings)
- 600 g chicken pieces, skinless for a lighter broth Chicken
- 300 g Chinese yam, peeled and sliced Chinese yam
- 4 slices fresh ginger Fresh ginger
- 4 pitted red jujubes Red jujube
- 1 tablespoon goji berries (optional, at the end) Goji berry
- 8 cups water and salt to taste
Preparation
- Blanch the chicken 2 minutes in boiling water and drain for a clear broth.
- Add the chicken to the water with ginger and jujubes; bring to a boil and skim.
- Simmer very gently 60 minutes; add the yam and cook 20–25 minutes more.
- Stir in the goji berries off the heat, season, and serve hot.
Traditional reading
It combines a warming food (chicken) with a center-focused food-medicine (Chinese yam) and aromatics; it is studied as a recovery and cold-season dish, not as treatment.
Variations
- Plant-based version: replace the chicken with shiitake and cooked black soybeans.
- In summer it is lightened with daikon instead of yam.
Precautions
Handle raw chicken with strict hygiene and cook thoroughly. Goji may interact with anticoagulants; wear gloves if raw yam irritates your skin.
