Sweet potato congee

An orange, silky breakfast of rice with sweet potato cubes that melt into the pot: one of the most common mildly sweet congees of the home repertoire.

Ingredients (3 servings)

  • ¾ cup white rice Rice
  • 250 g sweet potato, peeled and diced Sweet potato
  • 7 cups water
  • 2 pitted red jujubes (optional) Red jujube
  • A pinch of salt

Preparation

  1. Rinse the rice and add it to a large pot with the cold water and jujubes.
  2. Bring to a boil, lower the heat, and simmer 30 minutes, stirring occasionally.
  3. Add the sweet potato and cook 20–25 minutes more, until it partly breaks down and colors the porridge.
  4. Season lightly and serve hot; it rarely needs added sugar.

Rice and sweet potato are studied as a center-focused pair: a neutral grain and a sweet root that satisfy without heaviness. Tradition describes it as a cold-season breakfast, easy to digest early in the day.

Variations

  • Half rice and half millet gives the golden northern version.
  • A slice of ginger during cooking gives the warmer winter reading.

Precautions

Sweet potato may cause gas: adjust portions to tolerance. Refrigerate leftovers promptly and reheat to boiling; with diabetes count both grain and root as carbohydrate.
