Ingredients (4 servings)
- 600 g stewing lamb, in chunks Lamb
- 5 slices fresh ginger Fresh ginger
- 1 small cinnamon stick Cinnamon
- 2 carrots, in large chunks Carrot
- 3 pitted red jujubes (optional) Red jujube
- 7 cups water and salt to taste
Preparation
- Blanch the lamb 3 minutes in boiling water and drain for a clear broth.
- Add it to the water with ginger, cinnamon, and jujubes; bring to a boil and skim.
- Stew very gently 90 minutes; add the carrot halfway through.
- Remove the cinnamon, season, and serve very hot.
