Preparation

  1. Briefly rinse the flowers and berries.
  2. Pour over the hot water and steep, covered, 5 minutes.
  3. Serve; the berries can be eaten at the end.

Chrysanthemum and goji are the classic pairing associated with the eyes and seasonal heat: a cooling flower balanced by a sweet, neutral berry.

Variations

  • In winter, swap the chrysanthemum for jujube and ginger.
  • Chilled with mint it becomes a midsummer drink.
